As featured on TANcast episode 121, here is Noah’s recipe for Tamale Casserole…
1 package of ground turkey
1 large yellow onion
2 large bell peppers
1 can diced tomatoes
1 (small) can tomato paste
1-2 tbsp chili powder
1-2 tbsp cumin
1 tbsp ground red pepper
salt to taste
(any corn bread recipe or mix)
Brown turkey in a skillet. Remove turkey and drain fat. In the same pan add chopped onion, cook until translucent. Add chopped bell pepper and spices, cook until soft. Add diced tomatoes, tomato past and turkey into the pan and bring to a simmer.
Preheat the oven to 425. Let the filling simmer while you make the cornbread top, any recipe will do (I use the one on the back of the cornmeal bag).
Spray a large casserole pan with cooking spray, add the filling. Pour the filling over the top of the filling being sure to cover all the filling. Sprinkle shredded cheese on top. Bake for 20-30 minutes. The casserole will be done when the filling is bubbling, a tooth pick comes out clean from the corn bread and the cornbread is golden brown.
