DMITK – Tamale Casserole

Tamale Casserole
Filling:
1 package of ground turkey
1 large yellow onion
2 large bell peppers
1 can diced tomatoes
1 (small) can tomato paste
1-2 tbsp chili powder
1-2 tbsp cumin
1 tbsp ground red pepper
salt to tasteTop:
(any corn bread recipe or mix)
shredded cheeseBrown turkey in a skillet. Remove turkey and drain fat. In the same pan add chopped onion, cook until translucent. Add chopped bell pepper and spices, cook until soft. Add diced tomatoes, tomato past and turkey into the pan and bring to a simmer.
Preheat the oven to 425. Let the filling simmer while you make the cornbread top, any recipe will do (I use the one on the back of the cornmeal bag).
Spray a large casserole pan with cooking spray, add the filling. Pour the filling over the top of the filling being sure to cover all the filling. Sprinkle shredded cheese on top. Bake for 20-30 minutes. The casserole will be done when the filling is bubbling, a tooth pick comes out clean from the corn bread and the cornbread is golden brown.

I will point out my wife wrote this up but she always cooked it, so I don’t fault her.
