Earl Grey Cookies
March 14th, 2011 . by NoahAs Promised, here is the vegan version of the Earl Grey Cookies. Pretty sure the only change was to switch out the butter for Smart Balance.
Earl Grey Tea Cookies
1 cup all purpose flour
1/4 cup sugar
1/4 cup powdered sugar
1 tablespoon Earl Grey tea leaves (about 3 bags of tea leaves)
1/4 teaspoon salt
1/2 teaspoon vanilla
1/2 cup vegan Smart Balance
Water (add 1 teaspoon at a time)
In a food processor pulse together the flour, sugar, powdered sugar, tea leaves and salt. Add vanilla and Smart Balance and pulse until dough looks like gravel. Continue pulsing dough adding 1 teaspoon of water at a time until dough forms a ball.
Wrap dough in plastic wrap and chill in the freezer for 30 minutes.
Roll out dough on a floured surface, dough should be between ¼ and ? inches thick. Use small cookie cutters and place on a baking sheet covered in parchment paper.
Preheat oven to 375°F. Bake for 12 minutes or until the edges just start to turn brown.
